Spicy Southwest Chicken Salad!
This recipe is so inexpensive to make that you could practically fish through the couch and come up with enough change to buy the ingredients. Canned chicken, beans, and corn are great staples to keep on hand in the pantry. Greek Yogurt is also always in our fridge, so this recipe is ready in less than 10 minutes on any given day. Talk about fast food!
You Will Need:
- Canned chicken
- Greek yogurt
- Taco seasoning & Ms. Dash Chipotle seasoning
- Canned black beans
- Canned yellow corn (I prefer Border Blend with peppers added)
- Green onions (optional and to taste)
Start It, Salad Shooter!
Dump your canned black beans in a colander and rinse them well. Canned beans tend to have a jelly-ish consistency if you leave the liquid on them, and that’s the last thing we want in our Southwest Salad!
Add in your canned Border Blend corn and let the two drain together while you take these next steps. This will give your corn and beans plenty of time to lose any excess liquid that would make our salad watery.
Now, just like with our Fresh ‘N Fruity Chicken Salad, we want to stir as little as possible once we start adding ingredients. So, go ahead and mix your Greek yogurt in with your chicken and stir everything until it’s well combined and creamy.
Add in your packet of taco seasoning and your Ms. Dash Chipotle seasoning to taste. There's cumin in the taco seasoning and chipotle pepper flakes in the Ms. Dash, so be careful if you don't like a lot of strong flavor or heat in your recipes. Both of these can get overpowering.
Mix this very well in order to get the flavor in every bite.
Add in your corn and beans, folding them in with a spatula.
I eat this plain or with Wheat Thins. I also love it with Cool Ranch Doritos on the weekends. Shhh…
