
Ingredients:
- 1 pound baby red potatoes
 - 2-4 whole eggs
 - 4-6 egg whites
 - 1 cup spinach
 - 4-6 strips of bacon
 - 4 slices of cheese
 - Leftover pizza (optional)
 - 1 tbsp salsa
 - 1 tbsp olive oil
 - Spices, salt & pepper to taste
 
Instructions:
- Quarter red potatoes and sauté in spices, salt & pepper and olive oil to make ‘home fries’ over medium-high heat. Season to taste.
 - Preheat oven to 300 degrees.
 - While potatoes are cooking, cook bacon, remove from grease when done and blot with paper towels.
 - Use the same pan with some leftover bacon grease to scramble eggs. Egg to egg white ratio is up to you.
 - Place cooked home fries in the bottom of a casserole dish or pie pan. Spoon scrambled eggs over the potatoes, then cover the eggs with the bacon strips.
 - If you have leftover pizza in the fridge, cut up a few slices (pepperoni is a bonus) and top the bacon/egg/potato layers with it.
 - Cover the entire concoction with slices of your favorite cheese. Place in oven until cheese melts.
 - Top with salsa.
 - Eat it all and wash it down with a glass of 2% milk.
 
Note: You can switch out the bacon with sausage, or just use both.
