Two words synonymous with fat gain - cheesecake and cookie.  What if I told you it’s possible to bake what Dani Shugart calls a Cheesecake Cookie that’s void of guilt, and full of pleasure?

I’ve experimented a number of times over the years to make healthy, muscle supportive desserts much to the chagrin of my wife and daughters, but Dani redeemed me with this quick and simple recipe.  So much so that I’m compelled to share it with you here.

You only need three ingredients as follows:

  1. Biotest Metabolic Drive Protein.
  2. Cream Cheese (preferably non-fat or Greek style).
  3. Frozen Raspberries.

Dani’s full instructional steps are available on T-Nation along with other great ideas - FYI.

Here is how I made them:

  1. Preheated the oven to 330 degrees.
  2. Added 8oz cream cheese, 2 scoops Metabolic Drive and 1 cup raspberries to bowl.
  3. Stir/mix ingredients until completely uniform and mixture is red from crushed berries.
  4. Spray cookie sheet with coconut oil from Trader Joe’s.
  5. Add mixture to cookie sheet with spoon (made about 9 cookies).
  6. Bake for 20 minutes or until poking with a fork comes out clean.
  7. Allow to cool.
  8. Enjoy!

This is the ingredient label on the Greek style cream cheese I bought when making these while on vacation this past week in AZ:

You can see it is much higher in protein and lower in fat than most other brands.

My youngest daughter actually loves these as much as me.  Give them a try and comment with your feedback.

Happy baking!
