I was recently asked about protein cookies, and my first thought was that honestly, I'd rather eat a regular cookie and have a protein shake. The two together sound like they'd be a dry, chalky mess. It piqued my interest though, I did try a cookie recipe, and while Seth loved it, I feel like it might still need some tweaking. I stumbled upon a flourless brownie recipe and decided to try subbing some of the cocoa for chocolate protein. I knew that the serious amount of peanut butter and bananas would keep this sucker from getting too dry, so I gave it a go. Seth loved it, and of course, he pushed me to share the recipe.

Macros: 18c/10f/8p when cut into 16 even servings
This was with the ingredients I used. Keep in mind that different brands, nut butters, etc will have different macros. I know there isn't an INSANE amount of protein in these, but compared to most treats, the macros on these are pretty good, and hell lets be honest, you're not really having just one square are you?

I've made this with both collagen and whey based proteins and both had good results.

INGREDIENTS (Makes around 16-20 brownies):

  • 2 bananas
  • 3/4 cup peanut butter (or any nut butter)
  • 2 tbsp oil of choice (I used melted butter)
  • 1/3 cup cocoa powder
  • 45g chocolate protein powder
  • 3/4 tsp baking powder
  • 1/3 cup +2 Tbsp coconut sugar
  • 1 egg
  • 1 tsp pure vanilla
  • pinch of salt
  • 1/4 cup dark chocolate chips
  • 1/4 cup white chocolate chips
  • 2 tbsp milk or milk alternative

 

Line a brownie tin and preheat oven to 360 degrees.

If you have a blender, you can make this ridiculously easily by blending all your wet ingredients. Move blended wet ingredients in a bowl and mix in all dry ingredients.

OR

Mash bananas with a fork until smooth.

Add oil/butter, nut butter, and all wet ingredients. Mix well.

Add dry ingredients, mixing well until you have a smooth batter.

Place in brownie tin and bake for roughly 20-25 mins until toothpicks come out slightly wet. I personally like to slightly undercook my baked goods to give them that gooey texture.

Leave to cool and slice into brownie squares
